Elderflower and Lime Champagne Cocktail

This cocktail is a really cool and refreshing drink for a bright summer's evening.  It is perfect either to start off a dinner party or for a celebration.  I made it to celebrate my graduation with some friends and, being a poor student and therefore not able to afford expensive champagne, the elderflower cordial and lime added a touch of class to a fairly cheap sparkling wine.

Ingredients per drink:
Juice of half a lime
a shot of elderflower cordial
champagne

Method:
Put some ice into the bottom of the glass, squeeze over it the lime juice and add the elderflower cordial.  Top the glass up with champagne or sparkling white wine.  Serve with a slice of lime.  Make sure you stir it well since the elderflower cordial likes to stay at the bottom.

Pimms


Pimms is such a good summery drink, it is one of the highlights of a summers day with its cool fruitiness.  I couldn't believe it when one of my friends recently said that she didn't like it and that she thought nobody really liked it and just pretended to because it is something you are supposed to drink in the summer.  That is just silliness, if you don't like it, don't drink it, although I can't believe that people wouldn't like it.

It's not really a cocktail and so doesn't really require a recipe, just mix together some pimms with lemonade, however strongly or weakly you like, but there are some things which should be added to create the perfect pimms:
Cucumber
Mint
Strawberries
Orange
Ice
Without these things pimms is still good, but it is not as good as it could be, also not as healthy, whereas pimms done properly is practically like eating a fruit salad but with alcohol.

Fiery Mojitos


I love cocktails and these fiery mojitos are both really easy to make and really tasty, they are a perfect refreshing drink for a summery afternoon and, in my opinion, much better than ordinary mojitos.

To make them you will need:
White rum
Ginger beer
Fresh mint leaves
Limes
Ice

In each of these glasses i first put 2 shots of white rum, I then followed that with a few sprigs of mint, a quarter of a lime and some ice cubes, then added half a can of ginger beer, with a slice of lime to garnish the rim of the glass.
